 Green chili! No pics yet because I'm just writing this one from memory. 

You need:

Pork roast or carnitas meat

1 onion

3-4 cloves garlic

2 carrots

2 potatoes

Chicken or other broth

Chili verde AKA green salsa

1 TBSP sugar

Salt

Pepper

I start by cutting some pork roast into cubes, you can also start with carnitas pork if the store has it. Coat them lightly in flour and lightly brown them in oil, then set them aside and brown a chopped onion in  the same oil. Chop some garlic and add that in at the last minute, them put the pork back in with the onions and add just enough chicken broth to cover everything. Add your chili verde and simmer for about 1-2 hours, then add chopped carrots and potatoes, sugar, and salt and pepper to taste, and simmer for another 30-40 minutes until the vegetables are tender, and serve with warm corn tortillas and Jack or Mexican blend cheese. 

You can also add roasted chili peppers and tomatillos or green tomatoes if you have them!
