Oat Bran Pumpkin Spice Muffin recipe
(makes 16 muffins)
Preheat oven to 375 f
Dry mix:
1 ½ cups pastry flour
2 TBSP tapioca flour
2 TBSP milk powder (optional)
2 tsp spice mix
1 ½ tsp baking soda
1 tsp salt
Wet mix:
1 cup pumpkin puree
½ cup yogurt or buttermilk
½ cup milk or water
1/3 cup vegetable oil or melted butter
1 egg
Add to wet mix:
¾ cups oat bran
½ cup brown sugar
¼ cup white sugar
1 TBSP flax seed meal
1 TBSP chia seeds
1. Mix dry ingredients.
2. In a larger bowl, add wet ingredients and whisk until blended.
3. Add oat bran, sugar, flax seed meal, and chia seeds to wet ingredients and mix thoroughly.
4. Let sit for ½ hour.
5. Add dry ingredients and immediately scoop into lined muffin cups.
6. Place in preheated oven and bake 25 minutes.
7. Remove from oven and let cool on rack 15 minutes before eating.
8. Once completely cool they can be stored in an airtight container for up to 3 days.
It can be nice to add fresh or dried fruit, nuts, or seeds to this recipe if that's a thing you like. Chocolate chips are good too! These are delicious, moist, full of fiber, and will fill you up and keep you moving, if you know what I mean
